這道Baked eggs是最近發現的好菜,
是清理雪櫃堆積的食材,
使它們化身為色香味俱全的健康餸菜
材料很簡單也很flexible,
一般根據心情和物資決定
但常用的有tomato, spinach, onion....
deluxe 點的可加 ham, sausages, smoked salmon...
絕對任你配搭
方法如下
(為求方便,我決定用英文。 哈哈)
The idea is simple.
You get your fillings cooked,
season well,
add the eggs,
and bake.
DONE.
PREHEAT oven to 200 degrees Celsius.
While waiting, CUT your vegetables into large chucks. (Eg tomato, broccoli, onion....)
If you'd like to add in some raw meat eg sausages, chicken slices, cut them into smaller pieces too.
You want all your ingredients to be done approximately the same time.
So pay attention to sizes.
THROW them all into your baking tray.
Add a drizzle of olive oil, season well with salt and pepper,
some garlic slices (optional, but it will make your the whole dish MUCH nicer),
and, of course, your vegetables.
Mix well.
SLIDE the dish into your oven and bake for 30-40 minutes (depending on how much ingredients you've got)
As long as all ingredients (esp any meat) are done, you're good to go.
You could roast all your vegetables altogether, like I sometimes do when I am lazy - throwing everything into the baking tray in one go.
Alternatively, you may want to cook some of your vegetables separately. (eg spinach)
When all the fillings are ready, add your "cooked" ingredients.
eg smoked salmon, ham (cut into smaller pieces),
cheese, (and any separately cooked vegetables) etc
I like to use a mix of cheeses to really bring out the flavour.
Tesco offers a bag of mixed cheese of Mozzarella and Cheddar, which is very convenient (but also more expensive)
Alternatively, you may mix your own. Like I do.
DRAW a cross and make four gaps among your fillings to leave room for your eggs.
(A summary of what I've got in this tray:
3 plum tomatoes,
2 handfuls of spinach,
few slices of smoked salmon,
and 3 tablespoons of mixed grated cheese.

You can have more, or fewer eggs, depending on how much filling you've got.
It's really up to you.
Proportionality is the key.
ADD some more salt and pepper.
BAKE for 10-15 minutes until the eggs are set to your liking.
While waiting,
CUT up some fresh country rusty bread eg ciabatta, or baguette in this case.
Toast if desired.
Dah-dah!
A colourful, refreshing dish.
Serve piping hot with thick slices of bread and a green salad on the side.
(optional: grate some Parmesan on top,
or sprinkle some herbs.
Pine nuts work amazingly well too.)

Baked Eggs
- adapted from BBC Good Food
Serves 2
Ingredients:
- 4 medium tomatoes
- (Optional: spinach/sliced peppers/mushrooms/onion...ideally not more than 1.5 bowls cooked, or else you will need more eggs to cover everything)
- 3 garlic cloves
- 3 tbsp of olive oil
- salt and pepper
- 3-4 tbsp of grated cheese (I used mozzarella and cheddar)
- 4 large eggs
Steps:
- Preheat the oven to fan 180C/ conventional 200C/gas 6. Cut the vegetable into quarters or thick wedges, depending on their size, then spread them over a fairly shallow 1.5 litre ovenproof dish.
- Peel the garlic, slice thinly and sprinkle over the cut vegetables. Drizzle with the olive oil, season well with salt and pepper and stir everything together until the vegetables are glistening.
- Slide the dish into the oven and bake for 40 minutes until the veg has softened and are tinged with brown.
- Add any cooked meat you like and mix well. Scatter cheese evenly.
- Make four gaps among the mixture, break an egg into each gap and cover the dish with a sheet of foil. Return it to the oven for 10-15 minutes until the eggs are set to your liking.
- Scatter over the herbs and serve piping hot with thick slices of toast or warm ciabatta and a green salad on the side.
